Zupan’s Ricotta & Strawberry Shortcake

Ingredients

• 2 pints strawberries, washed, hulled and cut in half
• ¼ cup sugar
• 1 strip orange zest
• 8 oz unsalted butter, softened
• 2 cups sugar
• 2 eggs
• 1 pound ricotta, drained well
• 1/2 tsp sea salt
• 2 tbsp vanilla paste
• 4 cups all-purpose flour
• 2 tsp baking soda
• 2 tbsp demerara sugar (optional)
• 2 cups heavy cream
• ¼ cup powdered sugar
• 1 cup crème fraîche
