Ingredients

• 250 g macaroni
• 1 head of cauliflower, chopped into florets
• 25 g butter
• 2 tbsp plain flour
• 300 ml vegetable stock
• 250 ml milk, or cream or a mixture
• 2 tsp Dijon mustard, optional
• 100 g Cheddar, or vegan cheese
• Salt and black pepper, grated, plus extra for sprinkling
