Ingredients

  • 800 g Swede (peeled and chopped into rough 1cm cubes)
  • 2 Large Carrots (peeled and chopped into rough 1cm slices)
  • 1 Medium Onion (peeled and finely diced)
  • 3 Cloves Garlic (peeled and finely diced)
  • 200 g Red Lentils
  • 1 Litre Vegetable Stock
  • 1-2 Teaspoons Chilli Flakes (increase or decrease the amount of chilli flakes depending on how spicy you want your soup)
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Cumin Powder
  • 1 Teaspoon Turmeric
  • 1 Teaspoon Sugar
  • 1 Tablespoon Sunflower Oil
  • 15 g Fresh Parsley (finely chopped)
