Ingredients
- 320g cooked beetroots
- ½ tsp fennel seeds
- ½ tsp pink peppercorns + extra to serve
- 2 tsp mustard
- 2 tsp red wine vinegar
- 5 tbsp sunflower oil
- a handful of rocket
- 100ml whipping cream
- a dollop of horseradish cream
- 4 slices crustless sandwich bread slices
- a knob of butter
