Ingredients

  • 2 cups dry white wine (a good Riesling – save the rest to enjoy with the meal)
  • 1 small onion
  • 3 sprigs thyme
  • 2 sprigs oregano
  • Zest of 3 lemons
  • 1 tbsp kosher salt
  • 2 lbs whole chicken, cut into 10 pieces (including wings)
  • 2 tbsp olive oil
  • 0.5 cup pancetta, diced
  • 2 yellow onions, halved and thickly sliced
  • 3 medium carrots, peeled and cut into 1-inch pieces
  • 3 garlic cloves, finely chopped
  • 1 cup chicken broth
  • 1 bouquet garni (3 sprigs thyme, 1 sprig fresh oregano, 1 bay leaf)
  • 0.25 cup white vermouth (I use Rouge Gorge)
  • 1 container cremini mushrooms, cleaned and halved
  • 2 tbsp unsalted butter, at room temperature
  • 2 tbsp all-purpose flour
  • 3 tsp kosher salt
  • 2 tsp ground black pepper
  • Mashed potatoes
  • 3 tbsp flat-leaf parsley, finely chopped
  • 1 tsp Alcyon salt (or flaky sea salt)
  • Red pepper flakes, to taste
  • Zest of 1 lemon
