Soba Noodles Salad with Spicy Miso Dressing

Ingredients

• 1½ bundles Hakubaku Soba Noodles
• 250g shredded purple cabbage
• 1 small carrot (shredded)
• ½ red capsicum (strips)
• 1 stalk spring onion (chopped)
• 1 stalk coriander (coarsely chopped)
• 1 tbsp white miso
• 1 tbsp tahini sauce
• 2 tbsp light soy sauce
• 1 lime (juice only)
• 1½ tsp sugar
• ½ tsp chilli oil
• 1 tsp grated ginger
• 1 tbsp toasted sesame seeds
