• 8 slices prosciutto
• 1/2 rockmelon
• 1/2 honeydew melon
• 1/4 watermelon
• 1/4 cup mint leaves
• 1 cup watercress
• sea salt and cracked pepper for dressing
• 1 shallot, finely sliced
• 1 tsp dijon mustard
• 1 tbsp white wine vinegar
• 1 tbsp honey
• 1/4 cup olive oil
