Ingredients

• ¾ cup (180 ml) espresso or strong coffee, hot
• 2/3 cup (140 g) sugar
• ¼ cup (60 ml) milk
• 3 tbsp (45 ml) coffee liqueur (Tia Maria or other)
• 5 egg yolks
• ½ tsp (2.5 ml) vanilla
• 17 to 18 oz (475 to 500 g) mascarpone cheese, at room temperature
• 1 ½ cups (375 ml) 35% cream
• 30 ladyfingers (see note)
• 2 ½ cups (340 g) fresh raspberries
• 1 tbsp cocoa powder, sifted
