A quick and easy apple cake filled with fruit and spices

Ingredients

• 125g olive oil
• 125g coconut sugar or light brown sugar
• 3 medium eggs
• 200g plain flour or GF flour
• 1 tsp ground cinnamon
• 1 tsp Steenbergs apple pie spice mix
• 2 tsp baking powder
• 4 apples, 1 grated plus 3 halved, cored and finely sliced
• 2 tbsp demerara sugar
