Ingredients

• 1/4 tbs ¼ pound pancetta, diced
• 3 tbs olive oil
• 1 large shallot, minced
• 3 cloves garlic, minced
• 1/2 lb mixed mushroom, chopped
• 1/3 cup white wine
• 1 cup Half/Half
• 1/2 cup heavy cream
• 1/2 cup grated Parmigiano Reggiano cheese
• 2 tbs fresh thyme leaves
• 1 tbs minced parsley
• salt/pepper to taste
• 8 oz bowtie pasta, cooked al dente
