Ingredients: 1 cup (2 sticks) Challenge Unsalted Butter; 1 ½ cups granulated sugar; 1 egg; 1 cup canned solid pack pumpkin (not pumpkin pie filling); 1 teaspoon vanilla extract; 2 ½ cups all-purpose flour; 1 teaspoon salt; 2 teaspoons pumpkin pie spice; ½ teaspoon baking soda; 1 cup chopped pecans, toasted
