Ingredients

• 1 lb. ground venison
• 1 medium yellow onion, diced
• 2 poblano peppers
• 1 red bell pepper
• 1 yellow bell pepper
• 1 15-oz can of black beans
• 1 15-oz can of pinto beans
• 1 15-oz can of kidney beans
• 1 12-oz can of Spicy & Hot V8 vegetable juice
• 1-1/2 cups of chicken stock
• 1 1.75-oz McCormick chili spice packets
• 1/2 tsp. each of kosher salt & black pepper, divided use
• Vegetable or sunflower cooking oil
• 2 avocados, sliced (optional topping)
• Shredded cheddar cheese (optional topping)
• Sour cream (optional topping)
• Minced chives (optional topping)
