Sweet Potato Casserole in Crock Pot - Lola Covington

Ingredients

• 1 Cooking spray
• 4 Pounds sweet potatoes, washed, peeled and diced finely
• 4 teaspoons melted butter
• 2 cups brown sugar
• 1 Quarter cup of water
• 1 teaspoon ground cinnamon
• Half a teaspoon pure vanilla extract
• Quarter of a teaspoon ground nutmeg ( This is optional )
• Pinch salt ( Himalayan or Kosher salt )
• 1 and a half cups mini marshmallows
• Half a cup whole pecan nuts
