Ingredients

• 1 oz. wood ear mushroom
• 1 onion, quartered
• 1 bunch green onions, cut into thirds
• 8 cloves garlic
• 12 black peppercorns
• 12 cups chicken stock
• 2 Tbsp. vegetable oil
• ½ lb. pork tenderloin, thinly sliced into 2” long strips
• 2 Tbsp. cornstarch
• ¼ cup water
• 1 lb. firm tofu, drained and cut into ½” cubes
• 2 large eggs, beaten
• sliced green onions, for garnish
