• 2 Tbsp olive oil
• 1 large onion, diced
• 2 medium potatoes, sliced
• 4 cups raw radish greens/tops
• 4 cups water or soup stock
• 1 can of white beans (optional, to make the soup creamier)
• Salt and pepper to taste
• 1 radish, sliced
