Stuffed Aubergine

Ingredients

• 4 dr West Indian hot pepper
• 1 Onion
• 1 lb Minced beef
• 2 tb Flour
• 4 fl Red wine
• ; herbs
• 8 fl Beef stock made from a cube
• 2 tb Tomato puree
• 2 lg Aubergines
• 2 oz Each red; green, yellow
• A little chopped fresh
• 2 ts Dijon mustard
• 4 oz Breadcrumbs; mixed with
• Finely chopped fresh oregano
• Chopped garlic clove
• ; cheese and fresh
• 1 Stick celery
• ; peppers, chopped
• 1 md Carrot
• Salt and pepper
• 2 tb Oil or cooking fat
