Cheesy Meat Loaf – Love This Cookbook

Ingredients

• 3 Tablespoons extra-virgin olive oil
• 2 carrots cut into 1/4-inch dice
• 2 celery stalks cut into 1/4-inch dice
• 1 yellow onion cut into 1/4-inch dice
• 3 garlic cloves minced
• 1 28 oz can diced San Marzano tomatoes (extra liquid drained)
• 1/2 teaspoon fresh thyme
• 1 1/2 cups fresh bread crumbs
• 1/3 cup beef broth
• 2 pounds ground beef
• 2 eggs lightly beaten
• 1/4 cup minced fresh leaf parsely (optional) (I use less)
• 5 Tablespoons hamburger or steak seasoning
• 8 ounce mozzarella cheese, cut into 1/2-inch cubes
