Banana Pudding Parfaits - Once Upon a Chef

Ingredients

• ¾ cup + 2 tablespoons sugar
• ¼ cup + 2 tablespoons cornstarch
• ½ teaspoon salt
• 6 egg yolks
• 3½ cups whole milk
• 2 tablespoons unsalted butter
• 1 tablespoon + 1 teaspoon vanilla extract
• 1½ tablespoons dark rum
• ¾ cup heavy cream, (cold)
• 2 tablespoons confectioners' sugar
• 4 bananas, (very ripe but not mushy, sliced (see note))
• 2 (5.3-oz) boxes Walkers Pure Butter Shortbread Cookies, or similar, broken into ¼-inch pieces
