James Martin’s baked artichokes and eggs

Ingredients

• 5 purple artichokes
• 150 ml olive oil
• 1 bay leaf
• 4 eggs
• 3 large tomatoes
• 1 onion, finely chopped
• 3 garlic cloves, finely chopped
• 1 charred red pepper (see note, above)
• 1 tsp smoked paprika
• 0.5 tsp sea salt
• 1 loaf crusty bread, to serve
