Beef and Bean Enchiladas (Recipe)

Ingredients

• 1.5 pounds of lean ground beef
• 1 medium onion, chopped
• 16 ounces of refried beans
• 1 teaspoon of salt (or to taste)
• 1/8 teaspoon of garlic powder
• 1/3 cup of taco sauce
• 1 cup pitted ripe olives, quartered
• 12 corn tortillas, at room temperature
• Vegetable oil
• 2 (10 ounce) cans of enchilada sauce
• 3 cups shredded cheddar cheese
