Salmon Salad with Blueberry Vinaigrette - Oliva!
We absolutely love this recipe for salmon salad. Can you really go wrong with good delicious ingredients and a blueberry vinaigrette?
Ingredients
- 3 tbsp Olíva! Greek Athinolia EVOO
- 1 tbsp Olíva! Wild Blueberry Dark Balsamic
- ¼ shallot, minced
- ½ tsp dijon mustard
- ½ tsp Raw Local Bee Hollow Farms Liquid Honey
- salt & pepper to taste
- 1 ½ lbs salmon fillet
- 5 cups spring mix greens
- 1 cup arugula
- ½ small red onion, thinly sliced
- 1 avocado, diced
- ¾ cup fresh blueberries
