• 60 g grams butter
• 4 shallots, finely chopped
• 2 tbsp tablespoons fresh thyme leaves
• 2 cups cups sweet Riesling
• 2 cups cups red currant jelly
• ¼ cup cup balsamic vinegar
• 1 tsp teaspoon freshly ground black pepper
• 2 tbsp tablespoons whole cloves
