Fennel Orange Salad Recipe

Ingredients

• Half a medium head of white cabbage, sliced very thin
• 1 large head fennel, sliced very thin
• 2 cups radishes, sliced very thin
• 2 seedless oranges, zested, peeled and diced about 2/3 inch (reserve the zest)
• A dozen pitted dates, sliced
• 1/3 cup olive oil
• Juice of 2-3 lemons
• 1 tablespoon orange flower water (Passover: skip if it's hard to find)
• The reserved orange zest
• 2 tablespoons sugar
• Salt and pepper to taste
• 1/3 cup mint leaves, packed, sliced thin (replace with dill if you like dill better)
• 1/4-1/3 cup toasted sliced almonds (or roasted pumpkin seeds) for topping
