Ingredients

• 6 large red beets, peeled (about 500 g / 18 oz.)
• 5 mL (1 tsp) of olive oil
• Sea salt and freshly ground black pepper
• 2 pink grapefruits
• 1 container Shepherd Gourmet Dairy Feta cheese
• 30 mL (2 tbsp) of olive oil
• 30 mL (2 tbsp) of honey
• 15 mL (1 tbsp) of white wine vinegar
• 60 mL (1/4 cup) of shelled pistachios, crushed 
• Fresh basil
