• 1 tsp vanilla essence
• 2 apples cored and grated, or finely chopped
• 2 cups flour
• 1 tsp baking powder

• 2 tsp mixed spice
• Icing
• 50g butter
• grated rind and juice of 1 lemon
• 1 cup Chelsea Icing Sugar
