This apple shortcake pie is delicious served with lightly whipped cream, ice cream or thick yoghurt.
Ingredients
- Shortcake pastry125g butter½ cup Chelsea White Sugar1 egg1 ½ cups flour2 tbsp cornflour1 tbsp custard powder1 tsp baking powder
- Filling500g (approx. 2 cups) lightly stewed apple, (without extra water) or canned apple pie filling1 tsp mixed spice¼ cup Chelsea White Sugar (or sugar to taste)
- Chelsea Icing Sugar, to serve
