Crabmeat Stuffed Potatoes - Magic Seasoning Blends

Ingredients

• 6 (8-10 ounce) russet potatoes, as blemish-free as possible
• 11 ounces sharp cheddar cheese
• 2 pounds fresh lump or claw crabmeat
• ¼ pound (1 stick) unsalted butter or margarine, cut in 6 pieces
• 1 cup heavy whipping cream or half and half
• 1 tablespoon + 2 teaspoons Chef Paul Prudhomme's Vegetable Magic® or Shrimp Magic®
• 1½ teaspoons ground red pepper (preferably cayenne)
• About ⅓ cup finely chopped green onions (tops only), optional
