• 2 venison steaks
• salt and freshly ground black pepper
• 2 tbsp butter
• 1 shallot very finely diced
• 1 heaped tsp redcurrant jelly or plum jam/jelly
• 1 tsp finely chopped rosemary
• 3/4 cup red wine
• 1 tbsp balsamic vinegar
