Ingredients

• 1 ½ kg dried mixed fruit
• 100 g Glacè cherries, chopped
• ½ cup brandy
• 1 large Granny Smith apple, peeled and coarsely grated
• 1 tblsp Golden Syrup
• 1 cup brown sugar, firmly packed
• 4 eggs
• 250 g butter, melted and cooled
• 1 ½ cups plain flour, sifted
• ½ cup self-raising flour, sifted
• 1 tsp mixed spice, sifted
