Skillet Roasted Chicken with Peaches and Mozzarella

Ingredients

• 3-4 chicken breasts (skin on, bone in)
• 1 Tb olive oil
• 1 Tb butter
• 2 shallots (sliced in thin rings)
• 3 cloves minced garlic
• 1 cup sliced sweet bell peppers (red, yellow or orange or a combo)
• 1 Tb balsamic vinegar
• 1/2 cup white wine
• 1 cup sliced cherry tomatoes
• fresh mozzarella
• fresh basil
• 2-3 sliced fresh peaches (I kept the skin on)
• kosher salt
• smoked paprika
• balsamic glaze (optional)
