I saw some gorgeous white peaches on sale this week and was inspired to make a Skillet Roasted Chicken with Peaches and Mozzarella.

Ingredients
- 3-4 chicken breasts (skin on, bone in)
- 1 Tb olive oil
- 1 Tb butter
- 2 shallots (sliced in thin rings)
- 3 cloves minced garlic
- 1 cup sliced sweet bell peppers (red, yellow or orange or a combo)
- 1 Tb balsamic vinegar
- 1/2 cup white wine
- 1 cup sliced cherry tomatoes
- fresh mozzarella
- fresh basil
- 2-3 sliced fresh peaches (I kept the skin on)
- kosher salt
- smoked paprika
- balsamic glaze (optional)
