Theresa's Banana Cake
Banana Cake This cake was part of Theresa de Soto's legacy as snack goddess at Cloyne Court. I have no idea where she got it, but it's a keeper.
Ingredients
- 2 1/4 C cake flour or 2 C all purpose flour
- 1 1/4 C sugar
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 C softened butter
- 1 1/2 C thoroughly mashed ripe bananas
- 2 eggs
- 1 tsp vanilla
