Ingredients

• 1 - 2 cups McCain Sweet Corn
• 500 grams fish fillets
• 4 teaspoons Cajun Spice
• A blob of butter
• 1 packet Baby Leaf Salad
• Rosa tomatoes
• 1 tin black beans / red kidney beans
• 1 packet coleslaw mix
• 1 small bunch Spring onions chopped
• Coriander chopped
• Salt and pepper
• 1/3 cup chopped coriander
• 1/3 cup good quality olive oil
• 2 tablespoons freshly squeezed lime juice
• 1 tablespoon Dijon mustard
• 2 teaspoons honey
• 1 teaspoon garlic and herb seasoning
