Sourdough Challah — Jewish Food Society

Ingredients
- ⅔ cup ripe sourdough starter (100% hydration)
- 3 large eggs, separated (1 egg, 2 egg yolks)
- 3 tablespoons honey (single variety such as orange blossom or clover)
- ⅓ cup + 1 tablespoon vegetable oil
- ½ cup water lukewarm
- 3 ⅓ cups all purpose flour
- ⅓ cup whole-wheat flour
- 2 ½ teaspoons kosher salt
- 2 teaspoons active dry yeast (note: there is 2 ¼ teaspoons in 1 packet)
- Non-stick vegetable spray or vegetable oil
- 1 cup white sesame seeds (use unhulled or “golden” sesame seeds if you can find them - skin on = bigger sesame flavor)
- ¼ cup black sesame seeds
- ¼ cup nigella seeds
- ⅛ cup caraway seeds
- 2 tablespoons Maldon salt
- 1 large egg
- 2 finger pinches of salt (about ⅛ teaspoon)
