Ingredients

  • ⅔ cup ripe sourdough starter (100% hydration)
  • 3 large eggs, separated (1 egg, 2 egg yolks)
  • 3 tablespoons honey (single variety such as orange blossom or clover)
  • ⅓ cup + 1 tablespoon vegetable oil
  • ½ cup water lukewarm
  • 3 ⅓ cups all purpose flour
  • ⅓ cup whole-wheat flour
  • 2 ½ teaspoons kosher salt
  • 2 teaspoons active dry yeast (note: there is 2 ¼ teaspoons in 1 packet)
  • Non-stick vegetable spray or vegetable oil
  • 1 cup white sesame seeds (use unhulled or “golden” sesame seeds if you can find them - skin on = bigger sesame flavor)
  • ¼ cup black sesame seeds
  • ¼ cup nigella seeds
  • ⅛ cup caraway seeds
  • 2 tablespoons Maldon salt
  • 1 large egg
  • 2 finger pinches of salt (about ⅛ teaspoon)
