These little fragrant sour dough rolls with green olives are an ideal meal accompaniment. They can also be served as a traditional afternoon snack with a slice of salame (cured meats).

- 1 tbsp honey
- 200 g 00 flour
- 16 g fresh yeast
- 1 egg white
- 100 g pitted green olives (from Cerignola)
- 250 g flour, for second kneading
- 6 g sugar
- 50 g Manitoba flour
