Minestrone Soup –
This is a hearty warming meal with plenty of Vegetables and Orzo. The Orzo can be replaced with Macaroni if you prefer.
Ingredients
- 3 tbsp Olive Oil
- 1 small Onion, diced
- 3 cloves Garlic, crushed
- 1 Celery Stalk, chopped
- 1 medium carrot , peeled and chopped
- 1 tsp dry Oregano
- 1 tsp dry Thyme
- 2 tins Chopped Tomatoes, pureed (800g)
- 1 Bay Leaf
- 1l Vegetable Stock
- 100g Orzo
- Handful Baby Spinach, chopped
- 3-4 tbsp Parmesan, grated
- Fresh parsley, chopped (To serve)
- Salt and Pepper
- 3.5oz Orzo
- Step 1 Select Saute and once ready, add Olive Oil.
- Step 2 Add Onions and Garlic, Then saute for 2 – 3 minutes.
- Step 3 Add the Carrots, Celery, Oregano, Thyme, Tomatoes, Bay leaf, Vegetable Stock and Orzo.
- Step 4 Press Cancel then close the lid.
- Step 5 Select Manual and set on high for 2 minutes.
- Step 6 Turn the valve to seal.
- Step 7 Once ready, do a quick release by carefully turning the valve to release pressure.
- Step 8 Press the saute button and cook for another 5 minutes, or until the pasta is cooked.
- Step 9 Season with Salt and Pepper if needed.
