- 2 jumbo artichokes with stems
- Sea salt
- 1 clove garlic
- 1 lemon, cut in half
- 3/4 cup mayonnaise
- 1 clove garlic minced
- 1/2 teaspoon finely grated fresh lemon zest
- 1/2 to 1 teaspoon piment d’Espelette or hot paprika
- 2 tablespoons extra virgin olive oil (or as needed)
- Freshly ground black pepper
