Best Lemon Meringue Cottage Cheese Ice Cream

Ingredients

• 4 egg whites
• ½ tsp cream of tartar
• ⅛ tsp salt
• 1 cup sugar
• ½ tsp vanilla
• 4 egg yolks
• ⅔ cup sugar
• 1 Tbsp lemon zest
• ⅓ cup lemon juice
• ¼ tsp salt
• 6 Tbsp unsalted butter, cold
• 1 (500g, 17.5oz) tub full-fat cottage cheese
• ¼ cup honey
• 1 banana, optional (Adding a banana will give the finished ice cream a smoother texture but it will give it a banana flavour.)
