Ingredients

• For the poached pear:
• 1 cup dry white wine
• 1 tablespoon lemon juice
• 1/2 cup sugar
• 1/3 cup water
• Zest from a lemon
• 4 firm, not quite ripe Bosc, Barlett or Anjou pear, peeled, quartered and cored
• For the toffee:
• 3 tablespoons honey
• 2 tablespoons unsalted butter
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground cinnamon
• 2 star anise, broken into pieces
• 1/8 teaspoon freshly cracked whole peppercorns
• Vanilla ice cream
