Layered Maple Cabbage Salad
Red and green cabbage and kale mingle marvellously in this original, creamy take on coleslaw. A unique salad for special company!

Ingredients
- 500 ml (2 cups) red cabbage, sliced
- 500 ml (2 cups) kale, chopped
- 500 ml (2 cups) green cabbage, sliced
- 125 ml (1/2 cup) pumpkin seeds
- 1 stalk of celery, finely chopped
- 3 green onions, chopped
- 90 ml (6 tbsp) maple sugar mayonnaise or store-bought mayonnaise
- 30 ml (2 tbsp) maple vinegar
- 5 ml (1 tsp) Dijon mustard
- 60 ml (1/4 cup) maple syrup (preferably amber syrup for its rich flavour)
- Salt and pepper
