• 2 Tbsp Diamond Crystal or 1 tablespoon Morton kosher salt
• 1 Tbsp ground coriander
• 1 Tbsp ground cumin
• 1 1/2½tsp garam masala or Chinese five-spice powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon sugar
• 3 pounds chicken wings, flats and drumettes separated, patted dry with paper towels
