Irresistible sticky date pudding made with chopped dates, butter, and eggs. Served with butterscotch sauce. Perfect for dessert in under 2 hours!
Ingredients
- 1 1/4 cup (200g) chopped pitted dates
- 1 teaspoon bicarbonate of soda
- 60 gram butter, at room temperature
- 3/4 cup (165g) caster sugar
- 2 eggs
- 1 cup (150g) self-raising flour, sifted
- vanilla ice-cream, to serve
- Butterscotch sauce
- 3/4 cup (185ml) cream
- 3/4 cup (165g) firmly packed brown sugar
- 150 gram butter, chopped
