Floral tray bake from The Floral Baker: Cakes, Pastries and Breads by Frances Bissell
The tray bake is such a useful cake recipe, and can readily be adapted to rose, violet or lavender. You can now buy a rectangular plastic box in which to keep the tray bake in its tray.
Ingredients
- 200 g/7 oz/1¾ sticks butter
- 50 g/2 oz / ¼ cup floral sugar
- 150 g/5 oz/⅔ cup caster sugar
- crystallised flowers
- 75 g/3 oz/⅔ cup icing sugar, sifted
- a few drops of culinary floral flavouring
- 225 g/8 oz/2 cups self-raising flour
- 4 eggs, lightly beaten with
- 2 drops culinary floral flavouring
- food colouring
- 1–2 teaspoons lemon juice
