Ingredients

• 1/2 yellow onion, diced
• 2 cloves garlic, minced
• 4 Roma tomatoes, chopped
• 1/4 bunch or 1 tsp (5 mL) fresh thyme
• 1/4 tsp (1.2 mL) iodized salt
• 1/4 tsp (1.2 mL) ground black pepper
• 1/8 tsp (0.6 mL) ground cumin
• 1/2 c (95 g) brown rice
• 1/4 tsp (1.2 mL) crushed red pepper (optional) *optional
