• 3 medium Russet potatoes, rinsed and peeled
• 6 slices thick bacon
• 1 tablespoon Extra Virgin Olive Oil
• 1/2 small white onion, finely chopped
• 2 cloves garlic, minced
• 1/2 teaspoon kosher salt
• 1/4 teaspoon fresh ground black pepper
• 2 tablespoons unsalted butter, divided
• 6 eggs
• Dash of salt
• Dash of pepper
• 1/2 cup mayonnaise
• 1 tablespoon mild Dijon mustard
• 1 1/2 lbs ground sirloin
• 1 teaspoon kosher salt
• 2-3 tablespoons vegetable oil, for brushing on grill rack
• 12 slices mild cheddar cheese
• 1/4 cup unsalted butter
• 6 English muffins (good quality)
