Turkey & Poblano Gumbo - Magic Seasoning Blends

Ingredients

• 4 tablespoons Chef Paul Prudhomme's Poultry Magic® OR Chef Paul Prudhomme's Meat Magic®
• 1½ teaspoons Chef Paul Prudhomme's Ground Dried Anaheim Magic Chili
• ½ cup vegetable oil
• 1 cup all-purpose flour
• 2 cups chopped onions
• 1 cup chopped green bell peppers
• 1 cup chopped red bell peppers
• 1 cup chopped yellow bell peppers
• 3 cups fresh poblano chile peppers, cut into½ inch pieces or any other mild fresh chiles
• 1 pound smoked sausage of any kind (optional)
• 1 pound turkey breast, diced into ½ inch pieces (or chicken)
