Brown Rice With Spinach and Feta Cheese – Recipe Wise

Ingredients

• 1 teaspoon olive oil
• 1 large onion , finely chopped
• 1 cup brown rice
• 2 cups water or 2 cups broth
• 1 box frozen spinach , thawed and drained
• 4 ounces feta cheese , crumbled
• 8 kalamata olives , pitted and finely chopped
• 4 eggs , lightly beaten ( or 1 cup egg substitute )
