• 8 plain tortilla wraps
• 2 sirloin steaks, fat removed, cut into thin strips
• 2 shallots, finely sliced into rounds
• 2 red pepper, deseeded and finely sliced
• ½ tbsp Cajun seasoning
• 163g guacamole
• 200g salsa
• 150ml fresh soured cream
• 200g mature cheddar cheese, grated
• 200g tinned sweetcorn, drained
• 200g cherry tomatoes, cut in half
• 2 tbsp extra virgin olive oil
