• 150g of salted butter, frozen
• 220g of plain flour
• 1 pinch of salt
• water, cold, 5–6 tbsp.
• 1 tbsp of olive oil
• 2 shallots, finely chopped
• 1 tbsp of sage, chopped
• 500g of sausage meat, free-range
• 15g of dried apricots, roughly chopped
• 1 Cox apple, small, grated
• 100ml of apple juice
• 50g of light brown sugar
• 1 tsp fennel seeds, to garnish
