- 4 small parsnips, peeled, cored and grated
- large natural sausage skin casings about 1.2 litres/2 pints boiling chicken stock
- olive oil, for brushing
- 1 whole garlic clove
- Truffled Madeira Sauce
- salt, pepper, nutmeg
